So instead of a pat of butter in the hot pan, add a drizzle of olive oil. Olive oil isn't great for baking though, because of its distinctive, and sometimes quite strong, taste. There are plenty of recipes that make use of olive oil in baking if you want to give it a shot, though.

When you're making a batter, you generally want a more neutral fat to replace the butter as not to affect the flavor. This is why canola oil, a super neutral oil, works so well as a butter substitute. This replacement is especially handy if your recipe calls for melted butter, since canola oil is liquid at room temperature. And the swap is simple: Substitute one cup of melted butter for one cup of canola oil.

Coconut oil is another great butter substitute, especially because, like butter, it's solid when cool. Oil is often refined for two primary reasons: to make it more heat stable and to create a more neutral flavor. This includes baking.

Refined oils typically have a higher smoke point to make them more versatile in the kitchen. But smoke points vary from type to type. Check the bottle to see what the manufacturer has indicated as the smoke point. Naturally, oil also has flavor from the plant it was derived from. Walnut oil tastes a little nutty, coconut oil tastes a little coconutty, olive oil tastes rich and a little grassy, and so on. If you want a very neutral-tasting oil, then you might want to choose a refined oil.

The refining process strips the pronounced flavors and scents from the oil. Choose the oils that are right for your dietary needs, your taste, and your budget. But also keep in mind what you want in your recipe. Make sure the flavor profile of the oil fits with the overall flavor of your recipe. And pay attention to what you want from the recipe — do you need the firmness of a highly-saturated oil, or would that actually be a problem?

When I substituted w oil, it was crumbly. The dough did not hold together. Any suggestions on what oil to use in that case. I started w 2 TBSP of oil, then added one more and it did not come together, so disappointed.

Do not replace butter with canola oil when butter is used to thicken a sauce, such as a beurre blanc sauce.
